Storage: Store cabbage whole and unrinsed until you’re ready to use it. Place in a plastic bag or wrap with a towel and place in the crisper drawer of your refrigerator. Properly stored, it can last up to 2 months in your fridge. If you’re not using the whole head, tightly wrap the remaining portion and store in the refrigerator.

Preparation: Remove thick outer leaves then cut cabbage from pole to pole. Slice, chop, or leave whole as the recipe recommends.

Taste: Raw cabbage is slightly peppery and gets sweeter as it’s cooked. Like most members of the brassica family, cabbage can have a distinct odor that gets more pronounced when cooked.
