Jaune et Verte,is an heirloom scallop squash known for it’s pale green and ivory coloring and creamy flesh. Also known as Pattinson Panache, it’s type of pattypan or scallop squash and a variety of summer squash.

Storage: Store them whole, dry, and unwashed in an open plastic bag in the refrigerator. Use in 1-2 weeks.

Preparation: Rinse the zucchini under cold water. Wipe dry with a paper towel to remove any dirt from skin. Remove ends and chop into any size, although wedges may be the easiest to cook with. They are delicious sautéed, grilled, or roasted.

Taste: Jaune et Verte have a mild, sweet flavor
