Pattypan (or patty pan) squash is a varietal of summer squash notable for it’s round, flat shape. The name comes from a pan used for baking a patty. It’s also known as scallop squash, granny squash, custard squash, button squash, scallopini, schwoughskie squash (Poughkeepsie, NY), squash (Australia), ciblème (Cajun English), and comes in a variety of colors including white, green, yellow, orange, and multi-color varieties.
Storage: Store them whole, dry, and unwashed in an open plastic bag in the refrigerator. Use in 1-2 weeks.
Preparation: Rinse the zucchini under cold water. Wipe dry with a paper towel to remove any dirt from skin. Remove ends and chop into any size, although wedges may be the easiest to cook with. They are delicious sautéed, grilled, or roasted.
Taste: Jaune et Verte have a mild, sweet flavor
