Ipomoea batata 'Murasaki'
Although called a Japanese Sweet Potato, the Murasaki Sweet Potato was actually developed in Louisiana by the Louisiana Experiment Station in 2001 and released to growers in 2008. Murasaki means purple in Japanese and looks at tastes similar to many Asian sweet potato varieties. These purple-skinned potatoes have a creamy white flesh with a texture that is extra starchy.
Storage: Store sweet potatoes in a cool, dry area that gets good ventilation.
Preparation: Use Murasaki Sweet Potatoes as you would use a regular baking potato. With a high starch content, they’re perfect for roasting and can also be pureed in soups or stews.
Taste: Murasaki Sweet Potatoes are drier than regular sweet potatoes, more similar to a regular potato than a sweet potato. They’re also less sweet than regular sweet potatoes, with a nutty, earthy sweetness.
