Storage: Fennel stores well, provided the leaves are removed and the bulb is hyrdated. Store in an airtight container or plastic bag for a week or more.
Preparation: When preparing fresh fennel, cut off the stalks where they emerge from the bulb (they can be used in stews and soups and the leaves can be used as an herb, like dill); then slice or dice the bulb as desired, discarding the dense core.
Taste: Anise/liquorice-like
Nutritional Benefits: Fennel is rich in potassium, which is essential for creating muscle, breaking down carbohydrates and building protein. Fennel is also a good source of calcium to support strong bones and teeth.
