Butternut Squash
Storage: Whole Butternut Squash will keep for a month if stored in a cool, dark place. Do not leave whole squash in the refrigerator. Peeled and chopped butternut squash should be kept tightly sealed in the refrigerator for five days.
Preparation: Cut the squash lengthwise down the middle then remove both ends. Peel off skin and scoop out seeds, then dice.
Taste: Slightly sweet, nutty.
