Storage: Store in a cool, dry, dark place.

Preparation: Use the stems to infuse stocks and sauces with delicious flavor. You can also dry them and roast a whole fish or rack of lamb on them. The tender fronds can be added to salads, or chopped and added to potato salad.

 Taste:  A milder, more delicate taste than other fennels and a sweet licorice note.

 Nutritional Benefits: Bronze fennel contains vitamin C, potassium, magnesium and iron.
