Fava Beans

Storage: Place unshelled fava beans in a plastic bag or paper sack in the refrigerator for about 10 days.

Preparation: Fava beans can be cooked whole (pod and beans) in yogurt sauce with lamb, or cut up and sautéed with garlic and onions and served with lemon and cilantro.

Taste: Tender, with a sweet, mild and grassy flavor.

Nutritional Benefits: Fava beans are incredibly nutritious and an excellent source of soluble fiber, protein, folate, manganese, copper and several other micronutrients. May help with Parkinson’s, fetal development, anemia, and the immune system.
