Storage: Store the whole, unpeeled ginger root in a resealable plastic bag, with the air pushed out, in the crisper drawer of the refrigerator. Whole ginger root can be frozen and taken out as needed with little to no thawing time.

Preparation: Finely diced ginger is a great flavor addition, especially in Asian cuisine. Try adding it in your next stir fry with onion and garlic. Can also be used in making fresh juices.

Taste: One of the most distinguishable tastes. Spicy, zesty, gingery.

Nutritional Benefits: Ginger is high in gingerol, a substance with powerful anti-inflammatory and antioxidant properties.

Young Ginger

Young ginger is milder in flavor than older ginger, and has a sweet floral fragrance. Because of its thin skin, peeling is not necessary.
