Cilantro Pesto
Yields 1 cup
Ingredients:
3 bunches fresh cilantro, stems removed
1 bunch fresh basil, stems removed
3 garlic cloves
3 tbsp pine nuts
1 cup extra virgin olive oil
1 tbsp pecorino cheese
1 tbsp parmesan cheese
Salt and pepper to taste
Procedure:
In a food processor/blender, pulse the cilantro, basil, garlic, pine nuts, pecorino and parmesan until well blended.
Puree while drizzling in olive oil until smooth.
Season with salt and pepper
