Cilantro Pesto

Yields 1 cup

 

 

Ingredients:

  • 3 bunches fresh cilantro, stems removed

  • 1 bunch fresh basil, stems removed

  • 3 garlic cloves

  • 3 tbsp pine nuts

  • 1 cup extra virgin olive oil

  • 1 tbsp pecorino cheese

  • 1 tbsp parmesan cheese

  • Salt and pepper to taste

 

Procedure:

  1. In a food processor/blender, pulse the cilantro, basil, garlic, pine nuts, pecorino and parmesan until well blended.

  2. Puree while drizzling in olive oil until smooth.

  3. Season with salt and pepper
