Quick-Pickled Red Onions
Ingredients (makes 2 cups):
1 red onion, sliced thinly
½ cup apple cider vinegar
½ cup water
2 tablespoons honey
pinch salt
Directions:
1) Place onion slices in a heat-proof bowl or jar.
2) In a small pot over high heat, combine vinegar, water, honey and salt, and bring
mixture to a boil.
3) Pour the hot liquid over onion slices. Cover with parchment paper and weigh
down lightly with another bowl to keep onions submerged.
4) Let onions sit at least 30 minutes before serving. Pickled onions can be kept in
liquid in a closed container in the refrigerator for at least one week.
