Dandelion Greens

Storage: Store in an open plastic bag in the refrigerator and use as soon as possible.

Preparation: Remove the thick, tough ribs and stems fully matured greens, if necessary. Younger leaves only need stems removed. Cut leaves crosswise into 1-to-2-inch pieces.

Taste: Bitter, earthy

Nutritional Benefits: Dandelion greens are full of calcium, iron, fiber, Vitamins A, E and K, and powerful antioxidants including beta Carotene and lutein.
