2022 CSA Farm Update: Week 3

Welcome to week 3 of the Katchkie Farm CSA. The weather stayed dry this past week, ending with summertime temperatures in the mid 90s. It is not exactly lettuce weather, but those summer tomatoes, peppers, eggplants, and melons are loving every minute of it.

In this week’s share you will find chamomile, which is not so common of an herb to find in a CSA share. In fact, in the 15+ years I have been involved in agriculture, not once have I seen or given chamomile in a CSA share. Of course, that is not to say it has never been done. The old adage “there is nothing new under the sun” more than likely rings true. This is such a special crop, we could not resist sharing it with our CSA. On the farm we grow a special variety of German Chamomile that has a slightly higher oil content which makes it ever so fragrant. Just a few flowers added to any dish or beverage is all that is needed to add its floral qualities.

My favorite use of chamomile is to make a tea with it. At the end of a long summer day, there is nothing like a glass of cold chamomile tea to calm the senses. I am not sure about all children, but mine seem to be immune to the calming nature the plant! That does not mean that you should not give it a try. Be brave this week and explore the possibilities of its flavors, you never know what may be created.

CSA Member Lydia recommends this recipe for Garlic Scapes Compound Butter: in a food processor, add 1 cup chopped scapes, 1 cup softened butter, 1/2 tsp lemon juice, and salt and process until smooth. Roll into a log on parchment paper, wrap, and refrigerate or freeze for up to 3 months.

From Lydia, "Best part is you can enjoy your scapes in more recipes over a longer period of time: garlic buttered noodles and rice, as a spread on breads, added vegetables, etc."
