Zucchini & Summer Squash Fritters

“I created zucchini & summer squash fritters using the garlic scapes, scallions, zucchini, yellow summer squash, and parsley. I’ve been trying to make meals for my family where meat isn’t the focus, or even part of the meal. My son is a very challenging eater, so this can be quite an undertaking. I’m constantly introducing veggies in different forms and flavors to him, and it’s quite the victory for me when it’s a success. I grated up the zucchini, squash, scapes, and scallions, added a beaten egg and some flour, and then lightly sauteed. These fritters were great – crispy edges and a lovely, tender center. I paired them with a Mexican Street Corn Salad, and it was a hit. Leftovers were great the next morning with a fried egg on top. These fritters would be a hit at this year’s Latke Fest- if only zucchini and summer squash were around!”
