Roasted Eggplant and Spring Onion Soup

“I picked these two vegetables because they stood out to me as the freshest and most bright. I added spices that would make it have a flavor that builds as you eat the soup. This can be served hot or cold and it’s just as tasty. I garnished it with garlic oil and fried greens. I chose to make it vegan to focus on the flavor of the veggies and not rely on a meat or fish to make it feel complete.”
