Summer Ratatouille Salad

Red Leaf Lettuce, Wild Arugula, Mizuna, Roasted Heirloom Carrots, Summer Squash, Shaved Candy Cane Beets, Grilled Radicchio, with a Yellow Gazpacho Vinaigrette


“I wanted to make something fresh. Since I’ve never used some of those lettuces before, I wanted them to be the highlight of the dish. I figured a salad would be appropriate as I tried sautéing them and grilling them, but they taste best raw. I like the colors summer has to offer and think simple dishes can be easy and beautiful”
